Maccabi LIFE Kitchen – One Pan Greek Salmon

Ingredients
4 salmon fillets
¼ cup olive oil
Salt and pepper
2 medium sweet potatoes chopped into cubes
1 red onion chopped into quarters
4-8 garlic cloves
1 lemon, sliced
1 red pepper, sliced thickly
½ cup cherry tomatoes
8 asparagus spears
2 tbs fresh oregano
2 sprigs fresh rosemary
2 tbs fresh thyme
Topping:
½ cup crumbled fetta cheese
¼ cup pitted olives
Juice of 1 lemon
Method
- Preheat oven to 180C degrees.
- Combine sweet potatoes, garlic, onions, olive oil, lemon juice, salt and pepper until the veggies are coated.
- Put them on a sheet pan and bake for 20-25 minutes.
- Move the sweet potatoes, garlic and onions to the side and add the salmon, peppers, asparagus, cherry tomatoes, sliced lemon, oregano, rosemary, thyme.
- Pour any remaining olive oil from the veggies onto the salmon.
- Bake 15-20 minutes
- Add feta cheese, olives and top everything with the juice of one lemon. Bake 5 more minutes.
- Enjoy!
